Vineyard and terroir

The low-yielding vineyards lie on the hills surrounding Lake Arancio, near Sambuca di Sicilia in the province of Agrigento. Their proximity to the lake moderates the local microclimate, producing temperature variations even during summer and providing an important water resource. Yield is 70 q/ha, equivalent to 7 tonnes per hectare.

Grapes

Nerello Mascalese.

Vinification

Once the grapes are ripe, the fruit-bearing canes are cut so that the bunches dry naturally under the hot Sicilian sun. The grapes are harvested after losing approximately 30% of their weight, then pressed and macerated on the skins for 10–12 days at 24–25°C. Malolactic fermentation takes place in concrete tanks. Giuseppe Burruano is the winemaker.

Ageing

Six months in barriques before bottling.

Red wine classified as Terre Siciliane IGT. Production area: Sambuca di Sicilia (AG). Vineyard yield: 70 q/ha (7 tonnes/ha).

Tasting profile

Bright, vivid and intense ruby red. The complex bouquet combines red fruit with spices and red flowers. The palate is warm, full, soft and balanced, finishing with a red-fruit aftertaste.

Serving and pairing

Serve at 18°C. Pair with legumes, mushrooms and richly flavoured meats, particularly barbecue ribs and gourmet burgers.
