Vineyard and terroir
The low-yielding organic vineyards were planted in 2005 on the hills around Lake Arancio in Sambuca di Sicilia. The lake moderates the local microclimate and helps protect the vines from the heat of Sicilian summers.
Grapes
Organic Nero d’Avola.
Vinification
The best grapes are selected from low-yielding organic vineyards. A very long fermentation and skin contact extract colour, body and aroma before pressing. Half of the wine matures in barriques and half in concrete tanks for approximately six months, during which malolactic fermentation takes place. It is then bottled promptly to preserve its fruit character.
Ageing
Approximately six months, divided equally between barriques and concrete tanks.
Tasting profile
Deep ruby red. The bouquet combines red and dark fruits with spice, balsamic eucalyptus and oak notes. Full-bodied, with a very long finish.
Serving and pairing
Serve at 16–18°C. Pair with medium-aged cheeses, red meat, game or wild boar. The technical sheet additionally suggests meatballs, roasted chicken and vegetables.
The wine is approachable on release and may develop for approximately eight years.
