Vineyard and terroir
Nero d’Avola grows at 350 m above sea level near Lake Arancio in Sambuca di Sicilia. The fresh soil contains limestone and clay. The lake supplies water and nutrients during dry periods, supporting juicy, violet-toned berries and fruit marked by freshness and balanced acidity.
Grapes
Nero d’Avola.
Vinification
The grapes are destemmed and crushed, then pressed lightly to avoid extracting green tannins. Maceration lasts approximately 10–12 days at 22–24°C under controlled temperature, with three pump-overs per day and one délestage. Free-run and gently pressed fractions are combined. Malolactic fermentation takes place in stainless-steel tanks.
Ageing
Ageing takes place in stainless-steel tanks.
Tasting profile
Intense ruby red with purple highlights. The aroma combines red fruit with balsamic and floral notes. The palate is warm and persistent, finishing with a woody nuance.
Serving and pairing
Serve at 16–18°C with first courses, pasta with ragù, eggplant caponata or medium-aged cheeses.
