Vineyard and terroir
The Grillo comes from Sambuca di Sicilia in the province of Agrigento. The vines occupy steep, south-east-facing slopes above Lake Arancio at 400–500 metres. The soil is entirely limestone, and the vineyards are 15–20 years old.
Grapes
100% Grillo.
Vinification
Fermentation takes place in stainless steel at 12°C for 20–25 days. Selected dry yeast is added, and the process is conducted in a strongly reductive environment.
Ageing
The wine matures in stainless-steel tanks with regular stirring of the fine lees before release.
Tasting profile
Pale lemon with green reflections. The intense, complex bouquet combines lime, white peach and grapefruit with passion fruit and tarragon. The palate is fresh and enveloping, with crisp acidity, pronounced minerality and a savoury finish that extends the persistence.
Serving and pairing
Serve at 10–12°C. Pair with oysters, caviar and shellfish, as well as fish soups, light risottos, couscous and fresh cheeses. It also suits sushi and tartare.
