Vineyard and terroir
The grapes come from Sambuca di Sicilia in the province of Agrigento. The vines grow on steep, south-east-facing slopes overlooking Lake Arancio at 400–500 metres. The vineyards are 15–20 years old, and the soil is composed of 90% limestone and 10% clay.
Grapes
40% Nerello Mascalese, 30% Merlot and 30% Cabernet Sauvignon.
Vinification
Fermentation takes place in stainless steel at 12°C for 20–25 days with selected dry yeast in a strongly reductive environment.
Ageing
The wine matures in stainless-steel tanks, with regular stirring of the fine lees before release.
Tasting profile
Bright pale pink. Jasmine and rose petals shape the floral bouquet, joined by delicate notes of peach, melon, pink grapefruit and marshmallow. The palate is fresh and refined, with mineral definition, persistence and a lightly bitter almond nuance on the finish.
Serving and pairing
Serve at 10–12°C. Pair with raw shellfish, vegetarian dishes, fresh cheeses, mildly spiced Asian cuisine and white meats.
