Vineyard and terroir
The vineyards lie on the Crocetta del Montello estate, within foothills forming an arc between the Alps and the Po Valley. Depending on the hillside site, the soils are volcanic or sedimentary; formed from fallen rock, they drain rainwater effectively. Cool summers and marked differences between daytime and nighttime temperatures support even ripening while preserving acidity. The average yield is 120 quintals/ha.
Grapes
The proportions of Chardonnay and Pinot Nero vary slightly by vintage.
Vinification
The grapes are harvested in late August. Whole bunches are gently pressed in a pneumatic press, and the must ferments in stainless-steel tanks at a controlled 17–19 °C. In the following spring, the two wines are blended in suitable proportions. Yeast cultures selected by Villa Sandi are added before bottling, and secondary fermentation takes place in the bottle.
Ageing
The base wines mature in stainless-steel tanks until the spring following harvest. After secondary fermentation, the bottles remain in underground cellars with constant temperature and humidity for at least 24 months on the lees. Following disgorgement, the wine rests for a further two months before release.
