Vineyard and terroir
The estate vineyards are in Rufina, Tuscany, at approximately 250–300 m, with southern and southwestern exposures. Their soil is clayey and stony, with abundant coarse mineral material. The vines are trained using Guyot and capovolto systems. Yield is stated at 20 hl/ha.
Grapes
Sangiovese, Malvasia Bianca and Trebbiano.
Vinification
The grapes are selected in the vineyard and harvested manually in mid-September. They are then hung from beams in the attic Vinsantaia, whose windows are opened during autumn days to aid drying. Appassimento continues from harvest until December, after which the wine is sealed in small barrels called caratelli.
Ageing
Ageing in caratelli lasts for a minimum of ten years. The remaining wine is carefully separated from its lees before bottling.
