Vineyard and terroir
The Viviani family farms six hectares of vineyards in the Valpolicella area, in the village of Mazzano, in the southeastern part of the area. The vineyards lie on slopes at 350–450 metres above sea level, on clay-limestone soils. The elevation gives good air circulation and low humidity, favourable conditions for the grapes used for Recioto, Valpolicella and Amarone. The vines are between 10 and 80 years old. Modern viticultural methods and equipment are combined with traditional practices. No pesticides, herbicides or other chemical fertilisers are used in the vineyards, which allows the farm to take part in the European Union's Directive 2078 programme for environmentally friendly agriculture.
Grapes
Corvina Veronese (about 75%), Rondinella (about 20%) and Molinara (about 5%).
Vinification
Minimal intervention, to preserve the wine's natural freshness and delicate aromatic character. The grapes are pressed gently and fermented at strictly controlled temperatures.
Ageing
No oak ageing.

Elegant, fresh and fruit-forward, with a delicate aromatic character, a silky texture, purity, precision and a refined balance.
