Vineyard and terroir
The Viviani family cultivates six hectares of vineyards around Mazzano in Valpolicella. The sites face south-east and lie at 350–450 metres above sea level, where air circulation and low humidity support healthy grapes. The vineyards are managed without pesticides, herbicides or chemical fertilisers under the European Union’s Directive 2078 programme for environmentally friendly farming.
Grapes
Corvina leads the blend, contributing fresh acidity and cherry notes. Rondinella adds body and accentuates Corvina’s delicate spice.
Vinification
The grapes are selected and harvested from the final week of September through the first week of October. Fermentation proceeds in several stages, with a further selection after the first stage. The wine then undergoes a second fermentation on the grape skins remaining from Amarone production, following the ripasso technique. This increases its concentration and gives it a richer flavour.
Ageing
The wine ages for approximately one year.
Tasting profile
Concentrated fruit and cherry aromas are joined by delicate spice. The palate is unusually elegant, with fresh acidity and a rich, full flavour.
