Vineyard and terroir

The vineyard was planted in 1990 at 5,000 vines per hectare, trained to Guyot and situated at 350 m. The soil is silty limestone. Exposure differs between the language versions: south-west to west in English and south-east in Italian. Selection takes place manually throughout fruit set, véraison and ripening so that only the best grapes reach maturity.

100% Timorasso.

Vinification

The crop is harvested by hand into small crates to keep berries intact before crushing. The crushed grapes undergo 12 hours of cold cryomaceration with dry ice. Besides cooling and extracting aromatic and colouring compounds, the carbon dioxide limits contact with oxygen. Alcoholic fermentation follows in stainless-steel tanks at 15–16°C. Subsequent cellar operations are performed under nitrogen to protect the wine from oxygen, retain aromas and colour, and limit sulfite use.

Tasting profile

Intense straw yellow. The broad, rich and full bouquet combines peach and pear with acacia blossom and honey. Bottle development brings more complex, hydrocarbon-like aromas. Warm, intense and soft on the palate, it balances its high alcoholic impression with organic acids and shows ample fruit, structure and long ageing potential.
