Vineyard and terroir
The vineyard lies in La Morra at 410 m, with a south-east to east exposure. Its tufo soil contains small proportions of sand and clay. Planted in 1988 at 6,000 vines per hectare, it is trained to Guyot. Over three decades, the ratio of leaf area to bunches has been increased to support grape quality. Selection is performed throughout fruit set, veraison and ripening, including three manual green harvests intended to reduce production and promote even ripening.
Grapes
100% Dolcetto.
Vinification
The grapes are harvested by hand into small crates to prevent berry damage before processing. Alcoholic fermentation takes place in temperature-controlled stainless-steel tanks with an emerged cap and racking and lasts approximately 15–20 days. Operations from the end of fermentation through bottling are protected with nitrogen to limit oxygen exposure, preserve aromas and colour, and reduce the use of sulfites.
Ageing
The wine does not mature in wood. It receives a brief period in stainless-steel tanks followed by natural settling.
Technical data
Dry extract is reported at 31–32 g/L in the parallel published versions.
Tasting profile
Deep ruby red with intense violet reflections. The broad, clean, vinous bouquet emphasizes black cherry, blueberry and abundant violet. The palate is full, warm and harmonious, with young silky tannins, light minerality and pronounced savouriness. Youthful vegetal nuances lead into a persistent, moderately tannic finish.
