Vineyard and terroir
The vines stand at 350 m above sea level on a southeast-facing site rooted in Marne di Sant’Agata soils of mixed clay, fine sand and calcareous components. Planting density is 6,000 vines per hectare, with Guyot training. The vineyard date is reported as 1990 in the English presentation and 1960 in the Italian presentation.
During the past 30 years, leaf area has been increased in relation to the number of bunches to support grape quality. Selection takes place progressively in the vineyard through fruit set, véraison and ripening. Two manual green harvests reduce the crop and encourage even bunch development and uniform ripening.
Grapes
100% Moscato d’Asti.
Vinification
The grapes are harvested by hand into small crates to avoid compression and berry breakage. Gentle pneumatic pressing is followed by 12 hours of cryomaceration with dry ice. This treatment promotes the extraction of aromatic and colouring compounds, lowers the temperature and limits oxygen exposure.
The resulting must undergoes cold static settling before being racked into a clean autoclave. Alcoholic fermentation proceeds at a controlled 15–16 °C and is stopped at approximately 5% alcohol by refrigeration to 0 °C. The stainless-steel tank is then sealed to retain the fermentation’s natural carbon dioxide.
Cold stabilization precedes sterile microfiltration and bottling with an isobaric filler, preserving the naturally produced perlage. From the end of alcoholic fermentation through bottling, nitrogen is used to protect the wine from oxygen, retain its aromatic and colouring compounds and reduce the need for sulfites.
Technical data
Dry extract: 18 g/L. Alcohol at the point fermentation is arrested: approximately 5% vol.
Tasting profile
The colour is an intense straw yellow, animated by a fine, persistent perlage. The broad, rounded and harmonious bouquet combines citrus, orange blossom, grapefruit and sage, followed by white-fleshed peach, elderflower and chamomile.
Sweet and creamy on the palate, it balances sugar and acidity to create freshness and minerality. Delicate yellow-peach and mandarin notes lead into an appealing citrus-toned finish. The Italian presentation additionally identifies a distinct note of acacia honey.
