About this wine

Vineyard and terroir

The grapes grow in the small Cartizze vineyard in the commune of Valdobbiadene, at 200–300 m. The vineyard occupies the slopes of a natural amphitheatre and is protected from cold winds by the Dolomite Mountains. This microclimate allows the fruit to ripen slowly and fully. The soils are limestone.

Vinification

Harvest usually takes place between 20 September and 10 October. After gentle pressing, the juice ferments with selected yeast cultures at a controlled 17–19 °C. Secondary fermentation follows the Metodo Italiano, or Charmat method, in pressurised steel tanks at 15–17 °C. Before bottling, the wine is cold-stabilised and filtered to remove the yeast sediment.

Ageing

The wine matures on its fine lees in stainless-steel tanks for three months.
