About this wine
Vineyard and terroir
The organically farmed vineyards lie at Fontane in Vittoria, south-eastern Sicily, at 230 m above sea level. The vines are trained by Guyot on a vertical trellis, planted at 5,000 vines per hectare, and average 12 years of age. The medium-textured red soils derive from calcareous Pliocene sub-Apennine sands, with layers of siliceous sand and clay.
Grapes
100% Grecanico.
Vinification
The grapes are harvested in September. Fermentation begins spontaneously with indigenous yeasts and takes place on the skins in terracotta amphorae.
Ageing
The wine matures in terracotta amphora and subsequently in bottle.
