Technical data, vinification, ageing and tasting profile

Montessu is produced from native Sulcis varieties with a substantial proportion of French grapes, all vinified separately. Harvest normally runs from the first half of September to the first ten days of October. Fermentation and skin maceration take place at 25–28°C with periodic pump-overs, followed by malolactic fermentation. The wine ages for about 12 months in French-oak barrels. It is intense ruby red, with fruit and liquorice aromas and mineral, caper, rosemary and pepper nuances. The palate is full, smooth and elegant, ending with a velvety finish.
