Technical data, vinification, ageing and tasting profile
Samas is hand-harvested at first light between 10 August and 10 September to preserve varietal aromas. Whole bunches arrive in small boxes and are pressed under cold inert atmosphere at up to 0.25 atm. After static clarification, selected yeasts are inoculated into clear must and fermentation proceeds at 16°C. The wine remains on fermentation lees for about 40 days with continuous stirring, then matures for around 2.5 months in stainless steel. After blending the two varieties, it receives a further 3 months in small concrete tanks for maturation and natural stabilisation. It is neither filtered nor clarified. Bright straw yellow with green reflections, it shows tropical fruit, citrus, sage and Mediterranean herbs, with a soft, fresh, saline and mineral palate. Recommended service temperature: 12–13°C; avoid excessively cold storage. Pair with fish, seafood, white meats or serve as an aperitif.
