Vineyard and terroir
The Garganega and Trebbiano grapes are grown in the commune of Illasi, an area shaped over several thousand years by the changing course of the Illasi stream. The vineyards lie at 60 to 130 m on gentle east-facing slopes.
Grapes
The text names Trebbiano alongside Garganega as the varieties grown in Illasi. It gives no proportions.
Vinification
The grapes are harvested by hand at the end of September and carefully selected. Some are allowed to dry slightly. After pressing, the harvest is chilled to below 10 °C and left in contact with the skins for several hours. The must is then separated from the pomace in a membrane press. Fermentation takes place at a controlled 16–18 °C.
Ageing
The wine spends 3–4 months on the lees.
Label / history
Incontro is the winery's tribute to the town of Soave, in the eastern part of the province of Verona, Veneto. The surrounding countryside is rich in art and historic buildings, most notably Soave Castle, an example of medieval military architecture. The name means "meeting" in Italian.
