About this wine
Vineyard and terroir
The fruit is grown around Leverano in Salento. The vineyards are influenced by the sea and lie on clay-limestone soils, with tuff in some areas. The climate is mild.
Vinification
The grapes are selected and harvested in the first half of September. After gentle pressing, the must remains briefly in contact with the skins before fermenting in stainless-steel tanks.
Ageing
The wine matures in steel barrels.

Serving and pairing
Pair with fish soups, shellfish, white meats, fresh cheeses or Burrata, the Puglian cheese made from whole cow’s milk.
Vintage notes
The 2021 growing season in Puglia was dry, and yields were 5% lower than in the previous year. Parts of Salento were struck by hail in July and again in August, causing significant damage, but the grapes ripened on schedule. The Salento harvest began in late August with white varieties, followed by red varieties in September.
