About this wine
Vineyard and terroir
The old vineyards lie at 300–600 m above sea level and produce very low yields.
Grapes
The blend comprises 70% Nero d’Avola and 30% Frappato.
Vinification
The Nero d’Avola is left on the vine to wither slightly and lose moisture naturally, concentrating the fruit. The Frappato is harvested early to preserve freshness in the must. Before fermentation, the grapes undergo partial drying in a process called “passimiento”, intended to add depth and complexity. The varieties are vinified separately, then slowly blended in proportions selected for each vintage.
