Ageing
A very small number of bottles were entrusted to Orygini for deep-water ageing. They spent several months 48 m below sea level in the Cyclops Island Marine Protected Area, off Sicily’s volcanic coast, under constant cool temperatures, in darkness, with gentle movement and strong water pressure. This was followed by two years of further ageing on land.
Label / history
Orygini’s motto is “Born from Fire, Aged by Water.” The project uses patented deep-water ageing techniques and experimental protocols validated by scientists to study the effects of underwater maturation on fine wine.
Every limited-edition bottle retains individual physical traces of its time underwater and carries a handcrafted brass seal made by the Napoli brothers, custodians of Sicily’s traditional Puppet Theatre craft. The wine was made available to Benanti Club members as a collectible release.
