About this wine
Vineyard and terroir
The fruit comes from Tenuta Novare Estate at Arbizzano di Negrar in Valpolicella Classica. Marl-limestone soils contain clay deposits. The vines average 20 years old and are trained to double Guyot.
Grapes
70% Corvina Veronese, 20% Corvinone and 10% Rondinella.
Vinification
Catullo is made by ripasso, a second fermentation. In March, fresh young Valpolicella from the current vintage is placed on the still slightly sweet skins from Amarone Classico and allowed to referment.
Ageing
The wine matures for 12 months in 75 hL French oak barrels, then for another year in 100 hL concrete vats. Bottle maturation lasts at least six months.
Technical data
Alcohol: 13.6%. Total acidity: 5.7 g/L. pH: 3.4. Format: 0.75 L.
Tasting profile
A medium-structured wine with delicate vanilla and chocolate spice, joined by cherry, sour cherry and white pepper. The palate combines Valpolicella's easy drinkability with silky tannins and sustained aromatic persistence. Its finish is fresh, soft and savoury, and the overall style is classic, elegant, balanced and harmonious.
Serving and pairing
Its firm structure suits medium-mature cheese, grilled meat, roasts and game.
