About this wine
Vineyard and terroir
The grapes grow in Puglia, where the climate is moderately warm. Rainfall is significant throughout the year, while summer winds from Africa can cause temperatures to rise rapidly and fluctuate sharply.
Vinification
The grapes remain on the vines for 15–20 days to dry, losing up to 50% of their weight, before being harvested by hand in late September or early October at optimal ripeness. After pressing, the must ferments in contact with the skins to extract aroma and colour. Malolactic fermentation follows.
Ageing
The wine ages in oak barrels for 3–4 months.
Tasting profile
The drying of the grapes contributes notes of ripe fruit and raisins.
Label / history
Botter worked with local producers for 30 years before acquiring Masseria Doppio Passo, its own estate in Puglia, in 2017.
