About this wine
Vineyard and terroir
The grapes grow in the Salice Salentino region. The climate is warm, with moderate temperatures and substantial rainfall throughout the year. In summer, hot winds from Africa can cause temperatures to rise sharply.
Vinification
The grapes are harvested by hand from late September to early October, then sorted and destemmed. Maceration is used to extract colour and compounds that contribute to the wine’s structure. Alcoholic and malolactic fermentation take place in stainless-steel tanks at a controlled temperature of 25–27 °C.
Ageing
The wine rests for one year in oak barrels, followed by one year in stainless-steel tanks.
