About this wine
Vineyard and terroir
The grapes grow in Puglia’s moderately warm climate. Rainfall is significant throughout the year, while African winds can bring rapid temperature rises and sharp fluctuations in summer.
Vinification
The grapes reach optimum ripeness in late September or early October, then remain on the vines for a further 15–20 days to wither, losing up to 50% of their weight. They are harvested by hand and pressed. The must undergoes a long fermentation in contact with the skins to extract aroma and colour, followed by a 30-day malolactic fermentation in oak barrels.
Ageing
The wine ages in oak barrels; the duration is not specified.
Tasting profile
The on-vine withering contributes notes of ripe fruit and raisins.
Label / history
The “Borgo del Mandorlo” range pays tribute to Puglia’s ancient origins and history. Its inspiration is a local landmark: an almond tree growing almost entirely among stones at the entrance to a cave, noted for its resilience.
