About this wine

Vineyard and terroir

The grapes grow at the Ca' Vittoria estate in Salento, owned by Botter. They are left to ripen for an extended period, building the high sugar and alcohol levels the appassimento method requires.

Vinification

Once slightly overripe, the grapes are left to dry on the vines for 15 days, losing around 50% of their weight and moisture. They are harvested by hand at the end of October and pressed. The must ferments for a fairly long time, which fully extracts the aromas and develops the wine's characteristic ruby-red colour.

Ageing

The wine ages in oak barrels for 3 or 4 months.

Tasting profile

A rich, mature wine with a ruby-red colour.

Label / history

The wine won a gold medal in 2016.
