About this wine
Vineyard and terroir
The grapes grow on sunny hills in Salento, in clay and chalk soils, and are harvested at optimum ripeness.
Vinification
The grapes are destemmed and gently pressed. After 4–8 days of maceration, fermentation takes place in stainless-steel tanks for 8–10 days at a controlled temperature of 25–30 °C.
Ageing
The wine rests on its lees in the same stainless-steel tanks for at least three months.
