Vineyard and terroir
The Primitivo fruit grows in Puglia’s warm, temperate climate, with significant rainfall throughout the year.
Vinification
The grapes are harvested in the first half of September. After 12 hours of pre-fermentation skin maceration, they are gently pressed. The must ferments in stainless-steel tanks at a controlled 16–18 °C.
The vinification uses modern stainless-steel versions of Puglia’s traditional millstone-style vessels. Their low, wide and fully open form is designed to reproduce the characteristics of the original stone structures, increasing contact between the must and skins and helping oxygen dissolve during fermentation. Archaeological finds confirm that such vessels were used in the Salento area from Puglia’s earliest winemaking experiments.
Ageing
The wine rests on its fine lees in steel tanks at a controlled 17–18 °C until bottling.
Serving and pairing
Pairs especially well with Mediterranean dishes, fish and shellfish.
