About this wine

Vineyard and terroir

The vineyards are in Puglia, in a warm, temperate climate with considerable rainfall throughout the year. In summer, African winds bring a rapid, noticeable rise in daytime temperatures and a marked difference between day and night.

Vinification

The grapes are harvested by hand in the last third of September. They are sorted, destemmed and gently pressed, then macerated for 8–10 days at a controlled temperature. The must is stirred by hand during fermentation. Malolactic fermentation takes place in stainless steel tanks.

Ageing

The wine matures in 25- and 50-litre tanks for 8–10 months.
