About this wine
Vineyard and terroir
The grapes are grown in Puglia, whose warm climate is strongly influenced by African winds. These winds bring summer heat and increase the difference between daytime and nighttime temperatures.
Vinification
The grapes are harvested in the middle and final ten-day periods of September. After destemming, the berries macerate at a controlled temperature of 12–14 °C. Alcoholic fermentation follows for 15–20 days at 25–27 °C, with malolactic fermentation completed afterwards.
Ageing
The wine ages for 12 months in stainless-steel tanks.
