About this wine
Vineyard and terroir
The vineyards are in Puglia. The climate is warm and temperate, with significant rainfall throughout the year. In summer, winds from Africa bring a rapid, noticeable rise in daytime temperatures, and the difference between day and night temperatures is marked.
Vinification
The slightly overripe grapes are harvested during the middle ten days of September. They are sorted, destemmed and gently pressed. Alcoholic fermentation lasts 10 days at a controlled temperature of 24–26 °C, and the must is mixed by hand during fermentation. Malolactic fermentation takes place in stainless steel tanks.
Ageing
70% of the wine matures in French and American oak barrels; the remainder is aged in stainless steel tanks. The total ageing period is 6–8 months.
