About this wine
Vineyard and terroir
The grapes grow in galestro, a calcareous clay soil distinctive of Tuscany.
Grapes
Sangiovese is the main variety. Small amounts of Canaiolo and Malvasia Nera are added for freshness.
Vinification
The wine follows the traditional Tuscan "Governo all'uso Toscano" method. Part of the crop is harvested in mid-September, destemmed and crushed. Maceration at 28 °C and alcoholic fermentation take place in stainless steel tanks for about two weeks.
The rest of the crop is left to dry on the vine until late autumn and picked slightly raisined, concentrated and rich in sugar. These grapes undergo a short maceration and are then added to the already fermented wine, which starts a second fermentation. About 5 kg of dried grapes is used for every 100 l of fermented wine. This slow second fermentation encourages the formation of glycerol, giving the wine a soft, rounded feel.
Ageing
After malolactic fermentation is complete, the wine is aged for about 5 months.
