About this wine
Vineyard and terroir
The fruit comes from the company’s vineyards in Salento.
Vinification
The grapes are harvested at full ripeness in late summer and early autumn. After gentle pressing, they undergo pre-fermentation maceration to extract colour, tannins, flavour and aroma. Fermentation takes place in stainless-steel vats for 20 days at 20–27 °C.
Ageing
The wine matures and is stored in temperature-controlled steel tanks until bottling.
