About this wine
Vineyard and terroir
The vines grow in the Sant'Ambrogio vineyard at 151 m above sea level. The soil is brown, fertile, deep clay that retains moisture well in dry conditions. The wine is organic.
Grapes
Five native varieties are used, with Corvina taking the lead.
Vinification
The grapes are hand-picked in late September, and only the best bunches are selected. Some are vinified immediately after harvest; the rest are left to dry in the fruit cellar until November. The grapes are destemmed, pressed and fermented in stainless steel tanks at a controlled 28 °C. The wine from the freshly harvested grapes is then put through the traditional Ripasso technique on Amarone pomace. The dried grapes are vinified in November. The two portions are blended and undergo malolactic fermentation.
Ageing
The wine ages for 12 months in tonneaux and large barrels, followed by 6 months in bottle before release.
