About this wine
Vineyard and terroir
The grapes grow in the Sant'Ambrogio vineyard at 151 metres above sea level. Its deep, fertile brown clay soil retains resilience in dry conditions, and the vines average 26 years of age.
Vinification
The grapes are harvested by hand at the end of September, with only the best bunches selected. Some are pressed immediately; the remainder dry in a fruit-drying room until November. After destemming and pressing, fermentation takes place at 28 °C. The fresh grapes macerate for 10 days and the partially dried grapes for 20 days. The two portions of must are blended in November and undergo malolactic fermentation.
Ageing
The wine ages in large oak barrels for 6–8 months, followed by nine months in bottle.

Open the bottle at least one hour before serving.
