About this wine
Vineyard and terroir
The grapes grow in the Sant'Ambrogio vineyard at an altitude of about 150 metres. The vines are 27 years old on average.

Only selected bunches are used.
Vinification
The grapes are harvested by hand in late September. Some are pressed immediately; the remainder dry in specially ventilated rooms under constant temperature and humidity control. In November, the dried grapes are crushed and destemmed, then fermented in stainless-steel tanks at 28 °C.
Ageing
The wine ages in oak barrels for 6–8 months, followed by nine months in the winery's cellars after bottling.
Serving and pairing
Decant for at least one hour before serving.
