About this wine
Vineyard and terroir
The wine is organic. The vines grow in the Sant’Ambrogio vineyard at 151 metres above sea level. The soil is brown, fertile, deep clay that retains moisture well in dry conditions. The vines are 17 years old on average.
Grapes
The grapes are selected Corvina, Corvinone, Rondinella and Croatina. The text gives no proportions.
Vinification
The grapes are harvested by hand in late September, and only the best bunches are selected. They are dried in special ventilated rooms with carefully controlled temperature and humidity. In February of the following year they are destemmed, pressed and fermented in stainless steel tanks at 16 °C. The juice stays in contact with the skins for 20 days, with daily pumping over and punching down. Malolactic fermentation follows.
Ageing
The wine ages for 12 months in French oak tonneaux, then for more than 6 months in stainless steel tanks. After bottling it matures for a further 6 months.
