About this wine
Vineyard and terroir
The fruit is selected from Ca’ Rugate vineyards in the hills around Montecchia di Crosara, where the soils comprise gravel and limestone. Yield is 90 quintals per hectare.
Grapes
45% Corvina, 40% Corvinone and 15% Rondinella.
Vinification
The grapes are picked by hand during the final two weeks of September and laid flat in small wooden boxes holding an average of 6 kg. This arrangement maintains airflow during approximately 6–7 months of gentle drying in ventilated rooms, concentrating flavour, sweetness and colour. In spring the dried grapes are crushed. Fermentation starts with natural yeast and finishes in barriques.
Ageing
The wine matures in wood on its lees for 10–12 months before bottling.
Technical data
Recioto della Valpolicella DOCG. Approximately 13.5% alcohol by volume. Production is about 5,000 bottles in 500 ml and 1,500 ml formats.
Tasting profile
Deep, dark ruby red. Black fruit and berries lead the aroma, accompanied by wild herbs and spice. The palate is sweet, luscious and rounded, with velvety tannins providing balance.
Serving and pairing
Serve initially at 10°C. Pair with chocolate desserts or Gorgonzola, or enjoy as a meditation wine.
