About this wine
Vineyard and terroir
The Catarratto is grown organically near Marsala, at elevations of up to 400 metres above sea level.
Vinification
The grapes are destemmed at the winery and cryomacerated in stainless steel tanks at a controlled temperature of around 4 °C for one day. After gentle pressing and static settling of the must, fermentation takes place at a controlled temperature.
Ageing
The wine is aged on fine lees in stainless steel tanks. After bottling it rests a further 2 months in the winery's cellars.
