About this wine
Vineyard and terroir
The grapes are organic and come from low-lying vineyards in Sicily.
Vinification
The grapes are harvested by hand and destemmed. Maceration and fermentation take place in stainless steel tanks at a controlled temperature of around 25 °C for 15–20 days. Malolactic fermentation follows.
Ageing
After malolactic fermentation, 50% of the wine is transferred to 225-litre barrels. The wine then ages on its fine lees for 2 months. After bottling it rests at least another 2 months in the winery's cellars.
