About this wine
Vineyard and terroir
The vineyards lie at 100 m above sea level on stony limestone and gravel soils. The grapes are cultivated with a focus on organic and biodynamic farming principles.
Vinification
The grapes are harvested at optimal ripeness, destemmed, gently pressed and macerated on their skins. Spontaneous fermentation with native yeasts takes place in steel vats without temperature control. After bottling, the remaining sugar undergoes natural secondary fermentation, producing alcohol and carbon dioxide. The wine is not disgorged, leaving natural sediment in the bottle.
Ageing
The wine rests in steel for six months before bottling.
