About this wine
Vinification
The grapes are harvested entirely by hand at optimal ripeness. Each variety is fermented separately, with methods and temperatures tailored to it. Maceration lasts 8–18 days. Malolactic fermentation takes place in barriques.
Ageing
Each variety matures separately for 12–14 months in French oak barrels. After blending, the wine ages for a further 8–10 months, followed by six months in the winery’s cellars after bottling.
Label / history
The name “Excelsus” means “outstanding” in Latin. The wine is produced only in the most exceptional vintage years.
