Vinification
The second fermentation takes place in the bottle by the traditional method.
Ageing
A minimum of 36 months in the cellars at a constant temperature gives this Gran Reserva its aromatic complexity, length and depth.
Tasting profile
Pale yellow with lemon and golden nuances, accompanied by fine, persistent bubbles. The nose is clean and moderately intense yet complex, combining sweet ripe fruit with pastry, balsamic and lactic notes. The palate balances acidity and residual sugar; its integrated mousse, unctuous texture and sustained development lead to a long, persistent finish.
Serving and pairing
Serve at 6–8 °C in a tall, fine, transparent cava glass. Suitable for aperitifs, seafood, poultry, oily fish and desserts that are not excessively sweet. Store upright, protected from light, at no more than 20 °C.
Vintage notes
The cool 2020 growing season preserved acidity suited to extended ageing. After its long maturation, the wine retains balance, length, depth and persistence.
