About this wine
Vineyard and terroir
Produced from selected organically farmed vineyards in Alt Penedès.
Grapes
Xarel·lo, Macabeo, Parellada and Chardonnay, harvested by hand at optimum ripeness.
Vinification
The base wine ferments in stainless-steel tanks. A second fermentation then takes place in the bottle by the traditional method.
Ageing
The wine spends at least 30 months on its lees in bottle in Cavas Hill’s underground cellars. This extended maturation develops structure, finesse and complexity while preserving freshness and the precision of its Brut Nature style.
Tasting profile
Straw yellow with golden reflections and fine, persistent bubbles that develop slowly in the glass. The nose is elegant and complex, showing lees-aged notes of hazelnut, toasted bread and pastry over a subtle grapefruit accent. Broad, balanced and creamy on the palate, with depth from ageing and a clean, persistent finish of toast and citrus.
Serving and pairing
Pair with selected seafood, charcoal-grilled fish, sushi, ceviche and contemporary signature cuisine.

The current release introduces redesigned presentation and organic certification.
Label / history
The Panot Gaudí collection draws its identity from Gaudí and Barcelona Modernism. Cavas Hill traces its history to 1887.
