About this wine
Vineyard and terroir
The grapes come from organically farmed vineyards aged 20–40 years in Moja, Olèrdola, Alt Penedès. Limestone soils and the cooling influence of the Garraf sea breeze encourage slow, balanced ripening.
Grapes
Xarel·lo, Macabeo and Parellada, harvested by hand at optimum ripeness.
Vinification
The base wine ferments in stainless-steel tanks before undergoing a second fermentation in bottle by the traditional method.
Ageing
At least 18 months on the lees in bottle in Cavas Hill’s underground cellars develops finesse, complexity and a creamy texture.
Tasting profile
Bright golden yellow with fine, persistent bubbles forming a delicate mousse. Fresh and expressive aromas of pear, kiwi and pineapple are complemented by citrus and a subtle floral note. The palate is refreshing and balanced, combining ripe fruit with lively acidity. Mandarin and a delicate aniseed nuance lead to a smooth finish recalling toasted bread and dried fruit.
Serving and pairing
Serve at 6–8 °C and store in a cool, dry place. Pair with seafood, fish, sushi and contemporary cuisine.

The current release introduces redesigned presentation and organic certification.
Label / history
Panot Gaudí pays tribute to Barcelona Modernism. Its label reinterprets the emblematic paving tile inspired by Gaudí, bringing art, architecture and wine together. Cavas Hill was founded in 1887.
