About this wine
Vineyard and terroir
The grapes grow on volcanic slopes in the Lessini Mountains, between the provinces of Vicenza and Verona. The appellation lies in Veneto and encompasses around 112 hectares of vineyards. The vines are 30 years old on average.
Vinification
The grapes are harvested by hand in the second half of September at optimal ripeness, then destemmed and gently pressed. The wine is produced by the Charmat-Martinotti method. Fermentation takes place in stainless-steel tanks at no more than 18 °C for 10–15 days, followed by a second fermentation in steel tanks.
Ageing
The wine rests for three months in steel tanks after the second fermentation, followed by one month in bottle.
