About this wine

Vineyard and terroir

The organic Trebbiano and Chardonnay fruit comes from vineyards in Rubicone, Emilia-Romagna.

Vinification

The grapes are harvested at optimal ripeness, partly by hand and partly mechanically. After destemming and gentle pressing, they ferment in steel tanks at low temperature for 12 days. Fermentation is stopped by rapidly reducing the temperature once the desired residual sugar level has been reached. Production follows ecological principles, including reduced water use and the use of renewable energy.

Ageing

The wine rests on its fine lees in the same steel tanks for 3–6 months.

Serving and pairing

Suitable as an aperitif and with fish, seafood, white meat, first courses, light snacks, vegetables and pasta.
