Vinification
The grapes are gently pressed, followed by fermentation in steel tanks at a controlled temperature of 16 °C. A second fermentation takes place in sealed cuvées. The wine contains 50 g/L of sugar.
Label / history
Cleto Chiarli founded the company in 1860 after managing Trattoria dell’Artigliere in central Modena, where he made Lambrusco for regular customers. In 2002, Mauro and Anselmo Chiarli decided to build a new winery at the Azienda Agricola Castelvetro estate; since 2003, it has produced Lambrusco under the “Cleto Chiarli” brand. The Chiarli family owns more than 90 ha of vineyards in the Lambrusco DOC production area.
