About this wine
Vineyard and terroir
The vines grow in low-yielding vineyards around Montefiascone and Castiglione in Teverina, at 300 m above sea level. They average 15 years of age and are planted on volcanic soils containing very fine gravel. The Merlot was planted by growers from Montpellier on land traditionally devoted to white grape varieties.
Vinification
The grapes are usually harvested by hand in the first days of September from selected low-yielding vineyards, then sorted by hand at the winery. They undergo 10–12 days of skin maceration, with the cap punched down several times, followed by 12 days of fermentation in temperature-controlled stainless-steel tanks. Malolactic fermentation takes place in French barriques.
Ageing
The wine matures for 12 months in new French oak barrels from Allier and Nevers.
