About this wine
Vineyard and terroir
The fruit comes from the hills around Orvieto, where the winery is located in Montecino, at 220 m above sea level. Each variety is planted in the soil that suits it best: Pinot Bianco in limestone, Sémillon in looser soil and Grechetto in clay. The vines are on average 13 years old, planted at 4,500 vines per hectare. Yields do not exceed 75 quintals per hectare.
Vinification
Harvest is by hand in September, with each of the three varieties picked separately at optimal ripeness to preserve its aromatic potential. Pinot Bianco is picked first and undergoes cold maceration at 10 °C for 4 hours. Sémillon is vinified reductively in an oxygen-protected environment, while Grechetto is made by a classic white-wine method. Each variety ferments separately in stainless steel tanks at controlled low temperatures of 13–15 °C, which helps retain the delicate primary aromas. Malolactic fermentation is avoided completely to keep the wine lively and fresh.
Ageing
After fermentation the wines are blended and aged on fine lees in the same stainless steel tanks for at least 6 months. The extended lees contact adds complexity, depth and body.
Tasting profile
Layered yet light, fresh and elegant, with a clear Umbrian character.
