Vineyard and terroir
The grapes grow in vineyards in Emilia-Romagna, described as a fertile Italian wine-producing region.
Vinification
The grapes are harvested at optimal ripeness. A short period of skin contact is followed by gentle pneumatic pressing. The must is settled at low temperature, then fermented for about eight days in temperature-controlled stainless-steel tanks at 10–12 °C. Secondary fermentation takes place with selected yeasts in sealed autoclaves according to the Italian Charmat method. The wine is bottled once fermentation is complete.
